3 ½ pounds beef fillet, sirloin or rump
4 ounces mushrooms, sliced
12 ounces beef stock
1-ounce onion soup mix
½ cup Italian dressing
In a bowl, mix stock with onion soup mix and Italian dressing and stir.
Put beef roast in a pan, add mushrooms, stock mix, cover with tin foil, place in the oven at 325 degrees F and bake for approximately 1 hour and 15 minutes or until the internal temperature of the roast is 130°F to 135°F for medium rare.
Leave roast to cool down a bit, slice and serve with the gravy on top.
