2 duck breasts, skin on and thinly sliced
2 zucchinis, sliced
1 tablespoon coconut oil
1 spring onion stack, chopped
1 daikon radish, chopped
2 green bell peppers, chopped
Salt and black pepper to the taste
Heat up a pan with the oil over medium-high heat, add spring onions, stir and cook for 2 minutes.
Add zucchinis, daikon, bell peppers, salt, and pepper, stir and cook for 10 minutes more.
Heat up another pan over medium-high heat, add duck slices, cook for 3 minutes on each side and transfer to the pan with the veggies.
Cook everything for 3 minutes more, divide between plates and serve.
