4 large trout fillets
Salt and black pepper to the taste
1 tablespoon olive oil
1 tablespoon ghee
Zest and juice from 1 orange
A handful parsley, chopped
½ cup almonds, chopped
Heat up a pan with the oil over medium-high heat, add the fish fillets, season with salt and pepper, cook for 4 minutes on each side, transfer to a plate and keep warm for now.
Heat up the same pan with the ghee over medium heat, add almonds, stir and toast for 1 minutes.
Add orange juice and zest, some salt and pepper and chopped parsley, stir, cook for 1 minute and pour over fish fillets.
Serve right away.
