Dark Chocolate Chia pudding


  • ¼ cup chia seeds (32 g/ 1.1 oz)
  • ¼ cup coconut milk (60 ml/ 2 fl oz)
  • ½ cup water or almond milk (120 ml/ 4 fl oz)
  • 1 tbsp raw cacao powder, unsweetened
  • 1 tbsp Erythritol or Swerve (10 g/ 0.4 oz)
  • 5-10 drops Stevia extract
  • top with ½ tbsp raw cocoa nibs or extra dark chocolate


  • add ¼ tsp cinnamon and a pinch of cayenne pepper


  1. Mix the chia seeds, coconut milk, water, cacao powder, Erythritol and stevia. If you prefer a smoother texture, place into a blender and pulse until smooth
  2. Let it sit for at least 10-15 minutes, ideally overnight in the fridge
  3. Top each with cocoa nibs, heavy cream and 1/2 a fresh strawberry just before serving
